We are thrilled to partner with Mornington based chef Kevin Nguyen for a very special and immersive French/Vietnamese dining ‘experience’ celebrating the key ingredient of the National Works on Paper exhibition, paper!

$130 Adult Guests, $120 FRIENDS of MPRG - Includes four courses, Peninsula wines, artist talks and more!

You will be served hot and cold canapes on arrival before taking a moment to view the exhibition and find your place at the dining table. Peninsula wines and three more delicious courses await you; each dish having been thoughtfully created using paper in a traditional Vietnamese style, with a French flair!

An evening peppered with artist talks and paper-themed pursuits; this multi-sensory dining experience is not to be missed! Gather your friends and join us in this rare dining experience at MPRG.

Kevin Nguyen

At 14 years old, Kevin began his culinary journey as a Kitchen hand in the family restaurant business where his father was a Head Chef and his grandmother ran her own floating seafood Restaurant in Nha Trang, Vietnam. Kevin started his professional training at the Western-Asian Professional Cookery College at 16 years old and shortly after graduation, landed a job as a Commis Chef (Junior Chef) at the Sofitel Hotel.

For the next 12 years he worked across Vietnam, Asia and Australia at resorts, casinos and fine dining restaurants, including ‘Jardin Tan’ at the Botanical Gardens Melbourne, with Vue Du Monde’s, Shannon Bennett. In 2011 Kevin worked under French-Vietnamese Michelin Chef, David Thai and also met Australian celebrity Chef, Luke Nguyen, who remains one of his greatest inspirations.

“Both Chefs, David Thai & Luke Nguyen are my greatest heroes. They fuel my passion for Vietnamese cuisine. It was an intimate conversation I had with Luke and his parents that marked a significant change in me. Since then, I set my goals, pushed myself harder and worked my way up further”, Kevin recalled.

Kevin is a bright, young Vietnamese chef and entrepreneur, who has sky-rocketed back from an industry lockdown to serve deliciously, casual laid-back, French-influenced Vietnamese food in the heart of Mornington.
